Jamaican Saltfish Fritters

Materials
- 6 oz driedsalted cod fish
- Cold Water, to Cover
- 1 cup NuPak All-Purpose Flour
- 1 tsp Baking Powder
- ½ cup Water
- 1 Large tomato
- 2 Green Onions, chopped
- NuPak Vegetable Oil or NuPakCoconut Oil for frying
Instructions
- Soak the cod fish in cold water overnight torehydrate it and remove excess salt. (You can boil for quick result)
- Remove any bones and skin. Flake and shred the cod fish into smallpieces and set aside.
- Sift NuPakFlour, Baking Powder, and pepper into a large bowl. Add the diced tomatoes, green onions, andflaked cod. Pour in ½ cup water and stiruntil everything is blended.
- Heat ¼ inch of NuPak Coconut or Vegetable oil in a large heavyskillet over medium heat. When the oilis hot, drop rounded spoonful of batter into the skillet. Fry on each side until golden brown andcrisp, about 5 minutes per side. Drainon paper towels and serve hot.
